Chef Schwartz’s philosophy on food is simple: serve the freshest, highest-quality, sustainable foods utilizing all-natural ingredients sourced from the finest local and national purveyors.

A Passion for Excellence

Jarrett Schwartz grew up fishing with his family on the East Coast and developed a healthy respect for fresh fish at an early age. His love of fishing and discernible palate naturally led him toward studying the art of sushi. He began his career at the critically-acclaimed Chez Betty in Park City then trained under Mikey Aguliar at Mikado and Kampai in Park City. Next, he moved on to open Happy Sumo in Park City and consult for Happy Sumo in Salt Lake City.

In 2006, Schwartz moved to Jackson Hole and opened a series of successful restaurants — Nikai, Mizu (Best New Asian Restaurants, Food and Wine, 2006), Sudachi, Blu-Kitchen, and The Kitchen (Best Unconventional Chef, Jackson Hole, 2010). In 2011, he helped to open Persephone Bakery and Picnic with owners Ali and Kevin, by designing the opening menu, organizing the kitchen, and operating as the opening chef. He also worked with Blue Collar Restaurant Group as a menu consultant and trained chefs at Sidewinders, Noodle Kitchen, and Bubba’s BBQ in Jackson Hole, and Sidewinders in Bozeman.

Throughout his years as a professional chef and restaurant owner, Schwartz developed a well-rounded array of recipes and culinary techniques that spans from classic to innovative. For the past decade, he has focused on his private chef business, working in exclusive locations including Los Angeles, Jackson Hole, the Yellowstone Club, the Hamptons, and Ibiza.

Schwartz is currently the executive chef and partner of Tanglewood and Foxtrot eateries in Bozeman where he lives with wife Jess and their five-year-old daughter, Lela. They will soon welcome her baby brother in July.
