Day Boat Scallop Crudo
Day boat scallop with red chiles, basil, mint and a Thai-style vinaigrette
Slice scallop as thin as possible and arrange on your plate, artfully arrange sliced red chiles, basil, mint and spoon vinaigrette over top. Sea salt to finish.
Vinaigrette
chop garlic and ginger – 1 tsp each
2 tbsp fresh lemon juice
2 tbsp apple cider vinegar
2 tbsp evoo
A pinch of dry chile
1 tsp fish sauce
